4 Saucy BBQ Recipes to Try This Summer

Finally. Summer is here, which means it's time to fire up the Barbecue! Grilled food is always a popular choice during the summertime. Nothing beats spending time outdoors while enjoying some mouth-watering food with friends or family members.

From delicious grilled chicken smothered in our homemade Mexican Marinade to slow-cooked pulled pork sandwiches topped off with melty cheese, these are truly unique BBQ choices so that you can stand out from the crowd. Recipe 1: Tangy Slow-Cooked Pulled Pork Sandwiches with Cheddar Cheese

8 Servings

Ingredients

roughly 2kg pork shoulder or pork belly

4 tablespoons MyBurrito Chipotle sauce

1 tablespoon salt

1 teaspoon black pepper

100ml apple cider vinegar

200ml chicken broth

8 fresh baps / buns

8 slices cheddar cheese

Optional toppings: coleslaw, pickles, sliced onions

STEP 1 

In a bowl, combine MyBurrito Chipotle sauce, salt, and black pepper. Mix well and place the pork shoulder or pork belly in a large resealable bag or a shallow dish. Pour the marinade over the pork, making sure it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 4 hours or overnight for best results.

STEP 2

Preheat your barbecue grill to medium-low heat. If using a gas grill, preheat one side of the grill and leave the other side off for indirect cooking. Remove the marinated pork from the refrigerator and let it sit at room temperature for about 30 minutes. If using a gas grill, place the pork on the indirect heat side of the grill. If using a charcoal grill, set up the coals on one side and place the pork on the opposite side of the grill. This will allow for slow cooking without direct heat. Close the lid and cook the pork for 4-6 hours, or until the internal temperature reaches 195°F (90°C) and the meat is tender and easily pulls apart. During the cooking process, you can periodically brush the pork with the marinade or spray it with apple cider vinegar to keep it moist. 

STEP 3

Once the pork is fully cooked, remove it from the grill and let it rest for about 15 minutes. Then, use two forks to shred the meat into smaller pieces. In a large saucepan, combine apple cider vinegar and chicken broth. Heat over medium heat until warm. Place the shredded pork in the saucepan with the vinegar and broth mixture. Stir well to combine and allow the pork to soak up the flavours for a few minutes.

STEP 4

Toast the baps / buns on the grill until slightly crispy. Assemble the pulled pork sandwiches by placing a generous amount of the pulled pork on the bottom half of each bun. Top each one with a slice of cheddar cheese and any desired toppings like coleslaw, pickles, and sliced onions. Cover with the top half of the bun.

Recipe 2: Grilled Corn on the Cob with Lemon and Coriander Butter 

Serves 4

Ingredients

4 corn cobs

100g unsalted butter, softened

½ sachet MyBurrito Mexican Marinade

Salt and pepper to taste

STEP 1

Preheat your barbecue grill to medium-high heat. In a small bowl, combine softened butter, MyBurrito Mexican Marinade, salt, and pepper. Mix well until all the ingredients are fully incorporated. Brush the corn ears with the Mexican butter mixture, ensuring they are evenly coated on all sides.

STEP 2

Place the corn on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the corn is tender and slightly charred. The cooking time may vary depending on the heat of your grill. While grilling, you can occasionally brush the corn with the remaining Mexican butter to enhance the flavours.

STEP 3

Once the corn is cooked, remove it from the grill and let it cool slightly for a few minutes. Serve the Grilled Corn on the Cob with Mexican Butter while it's still warm. You can optionally sprinkle some additional chopped coriander on top for garnish.

Recipe 3: Spicy Beer-soaked Beef Brisket

Serves 8

Ingredients

Roughly 2kg beef brisket

4 teaspoons MyBurrito Hot Sauce (or make it hotter - if you dare!)

½ bottle of beer (preferably a flavorful ale or lager)

1 tablespoon salt

1 teaspoon black pepper

STEP 1

In a bowl, combine MyBurrito Hot Sauce, beer, salt, and black pepper. Mix well to create the spicy beer marinade. Place the beef brisket in a large resealable bag or a shallow dish. Pour the marinade over the brisket, making sure it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 4 hours or overnight for best results.

STEP 2

Preheat your barbecue grill to medium-low heat. If using a gas grill, preheat one side of the grill and leave the other side off for indirect cooking. Ingredients

4 high-quality skin on, bone-in chicken breasts

1 sachet MyBurrito Mexican Marinade

2 tablespoons olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh coriander, chopped (for garnish)

STEP 1

In a resealable bag or a shallow dish, combine MyBurrito Mexican Marinade, olive oil, salt, and black pepper and then place the chicken breasts. Pour the marinade over the chicken, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight, to allow the flavours to penetrate the chicken.

STEP 2

Preheat your barbecue grill to medium-high heat. Remove the marinated chicken from the refrigerator and let it sit at room temperature for about 10 minutes. Place the chicken breasts on the preheated grill. Cook for about 6-8 minutes per side, or until the chicken is cooked through and the internal temperature reaches 74°C. While grilling, you can brush the chicken with any remaining marinade to enhance the flavour and keep the chicken moist.

STEP 3

Once the chicken is cooked, remove it from the grill and let it rest for a few minutes to allow the juices to redistribute. Slice the grilled chicken breasts into strips or serve them whole.
