Burrito Bowl
Ingredients:
1 My Burrito Kitchen Marinade Bag
Bottle of My Burrito Kitchen Chipotle BBQ sauce
800g Chicken breast
75g rice
1/4 Lettuce
1 Tomatoes
2 Limes
1 Red onion
1 Chopped red chilli
1 Mashed avocado
300ml Sour Cream
METHOD:
Serves 2
Slice your chicken into strips and add to the marinade bag for up to 3 days.
After marinaded, cook over a medium head in a pan and leave to one side.
Meanwhile create your pico de gallo (tomato salsa). In a bowl Chop your tomato into small chunks, finely chop the fresh coriander, chilies and onion. Season well with salt and add the juice of a lime. Keep tasting and adjust the seasoning and heat to what you want.
In another bowl mash your avocado, season well and add the second amount of lime juice and mix.
Layer your bowl with rice, lettuce, pico de gallow, avocado then the cooked chicken. Finally finish with a dollop of sour cream and a liberal lashing of our BBQ sauce.
